Aflatoxin M1 in milk and dairy products – A mini review

چکیده

Aflatoxins (AF) are a group of toxic secondary metabolites mostly produced by strains Aspergillus spp. fungi. There several types aflatoxins (AFB1, AFG1, AFB2, AFG2, AFM1, AFM2, etc.), but the most and common is AFB1. have been shown to possess powerful carcinogenic, mutagenic teratogenic properties. AFB1 can contaminate feed food during growth and/or storage under inappropriate conditions. When animals consume AFB1-contaminated feed, it undergoes various metabolic pathways finally, metabolized into hydroxylated metabolite which possibly excreted in milk if animal lactating. This issue presents huge concern regarding representation dairy products human diet. Furthermore, climate changes significant impact on aflatoxin production. Therefore, necessary develop improve strategies for controlling mitigating occurrence AFM1 products. The aim this paper provide an overview latest scientific literature
